Vegetable Salad Recipe

A vegetable salad recipe doesn't have to be boring if you excite the palate with all your favorite raw foods, and best of all, these raw vegetable recipes really last so that you feel full and satisfied when you finish them, so enjoy these simple raw food recipes!


Lazy Man's Salad

Ingredients:

5 oz baby romaine
1/2 avocado
2 cups grape tomatoes
1 roma tomato
1 lemon

Method:

Chop all ingredients, add to a bowl, and squeeze lemon juice on top of vegetable salad recipe.


Sicillian Salad

Ingredients:

1 head romaine
1/2 pint cherry tomatoes
1/3 cup eggplant
1/3 cup portobello mushrooms
1/4 cup sun dried tomatoes
1/4 cup red onion (optional)
1/4 cup black unsalted olives

Method:

Chop all ingredients and mix together, top with olive oil and lemon or favorite dressing.


Ensalada Mexicana

Ingredients:

5 oz baby romaine
1/4 cup avocado
1/2 jalapeno
1 clove minced garlic (optional)
1 medium tomato
1/3 cup onion (optional
1/3 cup cilantro
1/3 cup black unsalted olives
juice of 1/2 a lime

Method:

1. Chop romaine, 1/2 the tomato, and olives and add to a bowl.

2. Make guacamole by mashing avocado and adding diced tomato, jalapeno, garlic, onion, cilantro, and lime juice. Mix up and stir into salad.


Tropical Salad

Ingredients:

5 oz mixed greens
1/3 cup kiwi
1/3 cup strawberries
1/3 cup mango
1/4 cup dates
1/4 cup dehydrated shredded coconut from GoHunza.com
handful raw pecans
1/2 teaspoon minced ginger
2 tablespoons mint leaves

Method:

1. Chop kiwi, strawberries, mango, and dates and mix in with greens, coconut, pecans, ginger and mint, top with olive oil and lemon or favorite dressing.
